La Spada is quickly becoming a local favorite. However, such rapid success can be a “double-edged sword,” Scott explains. Serving nearly 140 guests a night while maintaining a high standard of service is no easy feat. “It’s amazing, but it also creates issues for us…we have to react very quickly,” he says.
